A NOVEL TECHNOLOGY FOR MAKING MEAT ALTERNATIVES

In this presentation, a novel technology will be presented to create highly fibrous materials that could form the basis for a next generation meat alternative. The technology is mild, is energy efficient, makes optimally use of the structuring potential of raw materials, and has the potential to make meat-like structures of any size and shape. In this presentation, the background of the technology will be presented and current plans to mature the technology to allow industrial implementation will be covered. Besides, the importance of making dedicated ingredients from plant materials for meat alternative applications will be briefly explained.
