CHOCOLATE: A HEALTHY ILLUSION?

Chocolate and health: a great deal has been written on this subject. Chocolate contains components that promote health by reducing the risk of developing cancer and cardiovascular disease, for example. But chocolate also contains large amounts of fat and sugar and consequently, it has a high calorie content. Is there such a thing as healthy chocolate? This presentation examines sugar and fat reduction in chocolate products and the challenges involved. The role of sugar and fat replacers in the structural composition of chocolate products will also be considered.
