Het herformuleren van bakkerijproducten wordt beoogd omwille van diverse redenen: nutritionele samenstelling, creëren van unieke smaken en texturen, duurzaamheid, plant-based, etc. In deze presentatie wordt ingegaan op de mogelijkheden voor herformuling in bakkerijapplicaties (brood, cake, koekjes, cracker) op basis van de learnings in recente onderzoeksprojecten met aandacht voor opportuniteiten en beperkingen van het gebruik van de onderzochte alternatieve grondstoffen (granen, pseudogranen, peulvruchten, etc.).
