As a consequence of the economic situation, food companies are seeking alternatives to high oleic sunflower oil. According to Kalsec, using standard oils to which natural antioxidants from rosemary have been added is a cost-effective solution. Their blend of natural antioxidants and natural antimicrobial agents is also new.
Antioxidants such as those found in rosemary have been used in culinary products for thousands of years and, according to ingredients company Kalsec, are therefore being embraced by food companies seeking natural solutions. “Herbalox® rosemary extract is fast-dissolving and has minimal odour and taste, but also enhances desirable flavours and masks undesirable ones,” explains senior researcher Henna Lu.

The activity of rosemary extract is mainly attributed to the predominantly oil-soluble phenolic diterpenes, including carnosic acid, and water-soluble phenols such as rosmarinic acid. When combined with other antioxidants (such as ascorbic acid), it is possible to improve oxidative stability. Lu: “When rosemary extract is added to rapeseed oil, for example, the costs are lower compared with sunflower oil. Kalsec has spent years researching oxidation and the synergy of antioxidants that enable oxidation at the highest level.” Studies were conducted with crackers and puffs.
Natural blend
New to the Kalsec product range is a blend of natural antioxidants and natural antimicrobial agents. Raw materials for the antioxidants and antimicrobial agents are acerola, buffered vinegar, dextrose produced by lactic acid and propionic bacteria, green tea and rosemary, among others.

“DuraShieldTM was developed with the aim of extending the shelf life of products, for example chilled products, but also vegan products or meat and poultry,” explains product manager Gareth Jones. “It is a unique 2-in-1 solution in which the ingredients are more powerful together than separately. What’s more, the product has a minimal impact on product taste and aroma. Food companies also retain their clean label, which is important to an increasing number of consumers when it comes to purchasing decisions.”
